Plate of Bacon, Vegetarian Style

I tried really hard to come up with a nifty name for this, but could not. Sorry! So today I am home sick. Nothing too awful, I am feeling better today than yesterday, and with that I feel stupid hungry. I want it all! My body just feels weak and down from fighting this. I want a giant plate of bacon! However, actual pig bacon kinda makes me gag just thinking about it. Vegetarian for too long I suppose. But this super easy recipe (side note, is this a recipe? I think it might be more of a hack or something since its so easy) will kick your bacon cravings with the warm, fatty, crispy, saltiness of bacon! (9 strips of pig bacon is just over 700 calories on average- where this recipe using 2 slices of toast comes in around 425 calories on average)

You will need:

-1 avocado

-couple drops of liquid smoke

-small pinch of salt

- 2-4 slice of bread, I liked super squishy fatty bacon when I ate it, so I used two pieces. If you were more into crispy bacon, you'll want more bread to thin out the squishy fatty bacon flavor

Step One

Toast your bread.

Step Two

Cut your avocado. I like to take a knife and slice around the avocado, then take the back of the knife and cross hatch the meat of the avocado. The core should just pop out at this point. Be carful!

Step Three

Scrape the avocado out of the skin with a spoon into a small bowl. Take a fork and mash up a little.

Step Four

Drop in 2-5 drops of liquid smoke, this depends on the size of your avocado, and the amount of smoked bacon flavor you are going for. I used 3 drops for my small-medium avocado. Mix well.

Step Five

Take avocado mixture and spread over your toast. If you want super "fatty bacon" spread it on thick. If your looking for "crispy bacon" add a thin layer.

Step Six

Sprinkle with a tiny pinch of salt.
