Banana Bread

This $h!# is bananas, B A N A N A S!

Okay, so for real, you can put in about 15 minutes worth of work, relax for an hour, and then enjoy some fresh, home made banana bread! If I can pull it off, so can you!

You'll need

-3 bananas, preferably over ripe with some brown spots

-2 eggs (or equivalent of egg substitute)

-1 stick (1/2 cup) of butter, unsalted, but if you have salted, just omit the salt below

-1/2 cup white sugar

-1/2 cup light brown sugar

-1 1/4 cup of what ever type of flour, or combinations of flours, that your prefer. I used 3/4 cup of all purpose white flour, 1/4 cup of almond flour, and 1/4 cup of oat meal

-1 teaspoon of vanilla

-1/2 teaspoon of salt

-any mix-ins you want! Our favorites are 1/2 cup of chocolate chips, usually a mix of semi sweet and milk, and 1/2 cup walnuts!

Step One

Preheat oven to 350 Fahrenheit

Step Two

In a large bowl mash bananas

Step Three

In a small bowl cream butter and the sugars together

Step Four

Add the butter/sugar mixture to the bananas. Slowly add in the rest of the ingredients. Mix until fully incorporated.

Step Five

Grease up a loaf pan with Crisco; pour mixture into pan, place pan in preheated oven for about 40 minutes until golden brown and tooth pick placed in the center comes out clean.

Step Six

Let cool to room temperature. Cut up and from my home to yours, ENJOY!

My daughter, who is in High School (where does the time go?) actually took this entire loaf in to share with her friends. Her friends are always asking for home made goodies! Makes a mama feel proud that these kids got a kick out of it!
